Effects of a Food Expression Art Therapy Program on Cognitive Function, Self-Expression and Depression for the Elderly with Moderate Dementia

Abstract
The national long term care insurance is expanding social service provision for the elderly with dementia. The purpose of this study was to develop a food expression art therapy program for the elderly with moderate dementia and to investigate its effects on cognitive function, self-expression and depression. The program was implemented to thirteen elderly persons with moderate dementia who visited either of the two Alzheimer¡¯s Disease Prevention Centers in S city. The effectiveness of the program was tested by implementing one group pre-test post-test experimental design. At the same time, a qualitative data analysis was conducted to find out changes in verbal and artistic expressions on the food arts. The result of the study showed that the program had a positive effect on self-expression and depression, but not on cognitive function. The qualitative data analysis also showed positive psychological changes in verbal expression and emotion through the verbal languages and related visual food arts presented during the sessions. The study suggests standardization and diffusion of food expression art therapy programs to prevent further deterioration of the elderly with moderate dementia.
